How to Make Italian Moka Pot Coffee (Plus the One Rule Italians Swear By)

An older Italian man once told me never to wash a moka pot.
I thought he was joking.
Turns out, it's one of the oldest traditions in Italian coffee culture.
You simply rinse it with water and let every pot of coffee season the aluminum over time. Whether you picked up a moka pot in Rome... or at HomeGoods... here's how to brew a rich, authentic Italian coffee at home.
Ingredients
• Water
• 18-20g finely ground coffee (espresso grind)
• Sugar (optional)
Directions
Fill the bottom chamber with water just below the safety valve.
Fill the filter basket with coffee. Level it off but don't tamp.
Assemble the moka pot.
Heat over medium-low heat.
Remove from the heat as soon as the coffee begins to sputter.
Pour and enjoy.
Pro Tip: Never rush with high heat. You will at best, have bitter coffee.. at worst you'll set the pot on fire. We don't talk about how I know this lol.
